God I love Mac and cheese. But that is SO not on my food list, but one I will indulge in if it's done right.

Tonight I made a vegetable omelet for dinner and some rye crackers. So good!! I wanted so bad to stop at the Thai place on the way home, or Chipotle.. but I made myself go home first to see what I could make that fits in my plan. Sure enough.. boom. eggs. Delicious. And ready in mere minutes.

All right... the food forum kerfuffle inspired me to come over here and hope and pray you guys can kick my ass into healthy eating.

I need ideas.  that's where i fail.  I never know what the hell to make.

Right now the healthiest thing I'm eating is a cold quinoa salad - quinoa, bananna pepper,cucumber, green onion, dried cranberries, fat free italian dressing.  All from my garden except the quinoa and dressing.  and cranberries.   It's delicious, and healthy, but if that's all I eat, it'll get old fast. :D

I need to get off the bread bandwagon.  My go to's are cereal and toast.  Bad!

So I'll be perusing this thread.

There's good people in here, Rio.  :) I just got here, myself.

That quinoa salad sounds like a good start...and with a garden and lots of fresh produce, you've got the raw materials at hand for some good stuff.

If you like quinoa, I posted a breakfast recipe upthread that I recently tried that's really good. Maybe that can be a non-bread option that still tastes hearty and filling...

Speaking of which, I'm off to have my own breakfast.

My garden is going to have zucchinni, spaghetti squash, green beans, tomatoes, green onions, spanish onions, english cucumbers, pickling cucumbers, maybe some peas, maybe some melons.  And cabbage.

This week I'm going to research fall veggies that i might still be able to start now. 

My biggest problem is not being a big vegetable fan, despite my love of gardening.

I have problems eating enough vegetables.  Fruit is no problem, but I suck at veggies.  I buy them to watch them rot. :eyeroll:

Yesterday was not a horrible day for eating, but I didn't run or swim.  We decided to take all 3 dogs to the beach for some SUP, and surfing, but when we got there the break was not that great. So we walked and threw the ball. All 3 dogs needed a bath (rolling in the sand) so I did get a *sort of* workout.
I was going to go to yoga this morning, but I am still drinking my coffee and class just started.....so I think I will go to spin class at 1030. Then I am going to be working in the garden, and mowing the back 40.

Food for the day? I think we are doing a veggie stir with brown rice for dinner.  Egg white and spinach scramble for breakfast/lunch.
Tricia..I love omelets.  Eggs are such quick, easy and good for you options. We go through them like crazy here.  I really wish DH was on the backyard chicken page with me!

Bolloxed, I am the same way.  I need to figure out a way to have veggies as snacks at work.

I keep seeing a quinoa Mac and cheese recipe that I want to try...

I'm making gluten free banana bread today.  I have the bananas, and I was going to make up a batch with them, using my regular recipe and just not eat any, but I googled and found one that uses oats, which I have on hand.  I need to try some of the other flours out there, but I'm a little skittish!

I made it to spin class and it was worth it.  Funny how hard it is to get there, but I never regret it.

Super sunny here today...mowed the lawns and now sitting on the deck enjoying a Lagunitas.

I did 2 miles and some about work.  Also spent time in the pool with the kiddos.  I did sit outside on the deck for a bit and felt like I was literally melting in the heat.  Unbearable!  Looking forward to a cool down in weather.

I ran this morning, started just after 9 with DD in the stroller and did 2 miles, then ran DD and Eddie back to the house and did another 2 faster.  It.was.so.hot.

I ate decently today, not great.  And now I'm stress eating b/c DH was stung by a hornet in the forest and managed to get himself to a gas station before the anaphylaxis started and he used the epi on himself.  He called me while he was rolling so I got EMS on the scene and was there in 10 minutes.  He's ok now, but holy shit.

Same here! It's bulky trash pickup soon so we spent the day throwing crap on the curb.

Thanks, cgraz.  It was very scary but thankfully his reaction wasn't too bad this time.  It stung him through his sock, that may be why.

My poor DD was saying things like "Papi, you can't die because I'll never find another Papi as sweet as you".   :'(

I am working a Dunkin' Donuts iced coffee into my points for today. Just because I have to be on the road, working, on a beautiful summer day.

And because it's better than blowing like 2 meals worth of points on a frigging Coolatta. (Which I think they are rebranding as "frozen coffee" BTW, WTF? I would think Coffee Coolatta would be a really recognizable brand item that you wouldn't mess with. Guaranteed there will still be loads of loyal DD regulars ordering Coffee Coolattas. I won't be one of them though! Not since I looked up how many points are in one of those suckers.)
