make a creamed spinach with sautéed leeks and (canned are fine, just drain well and chop) artichokes.  plop it into a casserole and top with crushed sour cream and onion potato chips mixed with panko breadcrumbs, melted butter, and a bit of grated cheese.  bake until browned.

Awesome, thanks!. I think that could be served as an appetizer with some crusty bread, too. Mmmmm.

roast chicken
spinach, artichoke, leek casserole
roast root veggies (potatoes, sweet potatoes, beets, carrots, parsnips, onion)
Brussels sprouts salad
mushroom gravy
Nantucket cranberry pie

Sounds yummy! I'd be interested in a recipe for that spinach/artichoke/leek one.

That pumpkin cake recipe looks like a much more elevated version of this pumpkin bar recipe I modified last month.  It was really easy.  I substituted a cup of melted butter for the vegetable oil and used ground cinnamon, ginger, cloves, and a bit of black pepper in lieu of "pumpkin pie spice" shown in the recipe.  Although it calls the dessert "bars," it's really more like a cake.
It was a sugar bomb but sooo good.

And not for the reason you think!
We have three birthdays to celebrate.

I made this -Pumpkin Cake.  I am not a huge pumpkin fan, but this was to die for. https://bromabakery.com/pumpkin-cake-with-cream-cheese-frosting/

For the first time in YEARS I am not hosting. I am pretty excited to go to someone else's house! Of course we are having a big family dinner at my house on Black Friday and are also having a small Friendsgiving here on Sunday because that's just how I roll!

I don't actually have to cook anything for Thanksgiving because DH already signed us up for two things that he likes to make (a seafood appetizer and his orange and bourbon infused cranberry sauce). And I've been asked to help my SIL (the host) make the gravy once we are there. But Eliza asked me to bring a couple other favorites so of course I'll be bringing them - mac and cheese and an onion gratin I make for the holidays.

For Friendsgiving I'm just roasting a chicken because it's only six of us, and I'm making a wild rice dish with leeks, cranberries, and corn. And my granny's creamed spinach recipe. My friends are bringing the rest.

Black Friday will be a ham and some other stuff tbd.

I was literally just saying the other night I wanted to make short ribs soon. Just something about fall that makes me want to cook that kind of food.

Definitely let us know how it turned out!
