This is easily the most beautiful thing I've ever cooked. It was a great way to use an abundance of CSA tomatoes. Very easy and quick to make, too.

LOL.a male eggplant's "belly button" is round.not so a female's.
"male" eggplants have fewer seeds and are therefore far less bitter than the "female" eggplants.
