are there any Poles in this place?

I grew up near a thriving Polish community, thus was able to get really good paczki from really good polish bakeries.  So when I saw some paczki at a local grocery, I bought them because I get all nostalgic about paczki... plus my GF has never had one.  And I knew that the grocery store version wouldn't measure up, and it didn't.  For one thing, they didn't have any with prunes so I had to make do with lemon curd.

But the problem is, now I've had an almost-paczki and it's like how scratching an itch makes it itchier.  I want the real thing.

So I think I need to make some.

So help, please.  Anyone willing to share their Baba's recipe?  I have an email out to my Polish aunt, but she's not really much of a cook and although her Baba used make cabbage rolls, pierogis and cured meats, I don't think I ever saw a home made sweet in her house... so I'm not hopeful there...

it's been about 20 years since I had a proper paczki... a few more days is no problem




my aunt sent me a note that what she learned from her Baba about paczki was to buy them from a bakery that uses lard for cooking and not to get distracted by american filling... she also said nevermind her crazy Baba, the best paczki's are boston cream donuts from Tim Hortons... so she was not so helpful to me...

Yum!!!

My grandmother (from Minsk, raised my mom in Chicago) made pacszki ....oh my god, delicious!!
Mom never made them. Had to get my fix from gramma.

Those Jelly-filled treats (with frosting) are the only type of donut that calls to me.

that "hot apple drink" looks like a recipe for warm and watery applesauce.  which i suppose could be great after a chilly fall hay ride.

for all my poking around the interwebs, I have certainly learned that there is no such thing as a small batch of paczki... I hope my coworkers are ready for this...

I'm digging the trick with the second cookie cutter.

I think the smallest batch recipe I've seen yet uses 7 egg yolks.  There's a few recipes for baked paczki, but most of the comments are "the sugar doesn't stick to them very well"... one funny recipe  solves this problem by dipping the better-for-you-because-they're-baked paczki in melted butter before dusting with sugar.  :) 



Don't worry though, I have no intention of baking any.
