Acorn squash

Anything exciting you like to do to yours? I bought one a few weeks ago and have been uninspired. Nothing sounds overwhelmingly appealing. Otherwise i may just toss it into my weekly butternut squash soup.

I made this recently and it was really tasty. Usually I just roast with butter (or oil) and brown sugar.

Yum!  Cut in half and bake. While baking, saute onions, carrots, celery (or whatever veggies you prefer) in a skillet.  I add ground turkey sausage but I am sure there are other options. And use whatever seasonings are appropriate for your veggies and protein.  Once no longer pink, stuff the acorn squash and bake for 20 or so minutes.  Yum!

Coat with Ghee and bake.   Lemon pepper and cracked black pepper.
