I will try the baked blueberry. It sounds yum.
I liked it a lot (obviously, or I wouldn't have eaten the whole pan ) I saw a blueberry-coconut version of it, but I don't have any unsweetened coconut on hand.
I've been making oatmeal in my crockpot and eating it the rest of the week too. It's fabulous. I have never had baked oatmeal.

So is the baked oatmeal crunchy?
I must try this then. One of the reasons I hate oatmeal is because of its texture. But I love oatmeal cookies that are soft. perhaps this will be a nice texture for me.
