Well, actually, here is an update.
I did not like it at first, but then I decided I wasn't going to throw it out, but rather have it for lunch at work. I put some in a leak proof container, added some of DH's almond milk, because it was fairly dry in the fridge. At work, I put it in the MW and heated it a bit, and I loved it... I was very surprised myself.
I actually made a second batch of it the following week.
