25 lbs of roma tomatoes

yesterday I bought 25 lbs of roma tomatoes at Costco... at the $20 price tag, I could not resist (if that sounds expensive to you, roma tomatoes in the supermarket right now are about $3.25/lb)

I picked through the box an separated out the ones that are nearly over-ripe... those are in the oven now, roasting... I'll run those through a food mill and freeze for later use

I also made a batch of rasam for lunch.


What should I do with the other 20+ lbs?

LOL!  I'm sure the ladies here who can and make big batches will be more helpful.  But I'd make shakshuka and moqueca for starters.

shakshuka is in regular rotation in this house, so there will definitely be some of that... you posted about moqueca before, but I completely forgot about it, so thank you for the reminder

With that volume, I'd definitely be doing a lot of roasting and freezing. I'd also make a big ole pot of sauce and freeze a bunch of that.

I keep looking at that Costco box too. I just figured I would make and freeze a huge batch of sauce, but curious to see others suggestions.

what do you do with your dried tomatoes?


the 25 lbs of tomatoes have turned into two kinds of tomato soup (roasted tomato soup and rasam), a big batch of bolognese (using roasted and fresh tomato), a couple of shakshuka meals, a few fresh salsas, and a big batch of chana masala

if they are still available at a reasonable price, I will buy another case once we get through the meals in the freezer

Snack on them.
Add them to salads.
Add to pasta.
add to sauces for fish and chicken.

I would do salsa and pasta sauce.  yum!!

I'll report. I am planning on doing it with salmon. No white fish for me.
