Oh, lemon zest and chopped parsley would be awesome. I've made a version of Chipotle's lime cilantro rice and it's pretty good. I have used broth before, too. I haven't heard of weehani rice. I'll look for it, and other mixes the next time I go to Trader Joe's.
Wehani is somewhat local! It sounds Hawaiian. I can't believe I haven't seen or heard of it before. Also, I have never seen dried limes. Do you buy them or make them?
I buy them at a middle-eastern grocery... very common in persian food...
Do you grind them up?
Speaking of Persian food, there's a rice dish that uses dill and Lima beans. A recipe is here..http://toriavey.com/toris-kitchen/2012/01/persian-dill-and-lima-bean-rice/But really, all we do is take cooked rice, throw in lots of dill, a bag of frozen Lima beans, and some cooked chicken- and steam it until heated through.
