We had sliced smoked tri-tip with chimichurri on telera rolls for dinner tonight. Holy moly, they were amazing.

Red meat always makes a sandwich better.

Leftover meatloaf (my mom's recipe)
white sandwich bread (the soft, cheap stuff with no nutritional value)
mayo (Hellman's, but I'll accept Duke's if I'm feeling crazy)
ground back pepper

Served cold or at room temperature. It can never be heated.

No substitutions  >:(

Nice crunchy, European-style roll with good, ripe Camembert.

FSM... I love this sandwich.  Makes a great burrito as well.

Cubano pannini is a fave as well.

The Cubans are flexible about the bread and some of the ingredients, so modify at will...

2 garlic cloves, minced
1/2 teaspoon olive oil
1/2 cup reduced-fat mayonnaise
8 slices artisan bread
8 thick slices deli smoked turkey
4 slices deli ham
8 slices Swiss cheese
12 dill pickle slices
1 cup fresh baby spinach

In a small skillet, cook and stir garlic in oil over medium-high heat until tender. Cool.
Stir garlic into mayonnaise; spread over bread slices. Layer four slices of bread with turkey, ham, cheese, pickles and spinach; close sandwiches.
Cook on a panini maker or indoor grill for 2-3 minutes or until browned and cheese is melted.

Yeah, good catch... we do smoked pork.

But, as with any peasant food, it gets made with lots of variations since it's basically a what do you currently have kind of thing.

I love a good chicken breast sandwich with grilled or roasted chicken breast, Romain lettuce, toasted whole wheat bread and mayonnaise. Mmm. I want to eat that right now

Publix chicken tenders sub with provolone and mayo and lettuce.

The best one they make, some of their other sandwiches are not so good.
