Diabetic friendly

Hi - I have a neighbor who has been in and out of the hospital with diabetic complications and recently had a toe amputated. He's a very sweet guy and I thought maybe to make/bake something for him. Any suggestions?

Fruit basket.  And even sugar free, cookies are not good. I think the friendliest thing you could do would be pop over or call when you're running to the store and ask if he needs anything. Does he live alone?

nut bark made with dark chocolate (>70%) is not bad for diabetics (as far as treat things go, anyway!)

I don't know, I just thought something would be nice. He does live with his brother who can take care of him, go to the store etc.

Maybe it depends on teh type of diabetes,  but the ones I know who have type 1 cannot eat a lot of fruit in one sitting. it raises their blood sugar too much.  I would assume it does the same thing for people with type 2, but the ones I know with type 2 don't seem to give a shit about what they eat...

This.  It's best to stay away from starchy carbs (flour, potatoes, rice) as these can spike blood glucose levels too quickly.  If you want to make a dessert, use dark berries (blackberries, blueberries) and instead of sugar use Splenda.

I just heard that he's going to AZ or somewhere soon. So, I'm not going to do anything at this point, but thank you for the suggestions.
