a little bit of fried food now and then is ok in my book
I can't have plantains unfried. It's just better that way. I've sauteed them in sugar, butter and rum to make a much firmer Bananas Foster thing, then stuff them into small puff pastry pockets and baked them like a banana finger pie or empanadas.

OMG I love okra and can eat it any way it's cooked as long as it's not slimey. I love pan-fried Indian okra (bindi masala)As for the tostones, we're staying in a friend's condo this week that's 1/2 mile away from Patacon: Colombian place that makes their famous dish -- tostones that are pounded so flat they can be used in place of bread for a sandwich.
I grew up on this stuff.
