what do you mean by "easy" (does not require high skill level? does not take much time?  nothing that includes getting out a mixing bowl?)

hummus, tzatziki & taramosalata w/ pita crisps, marinated olives
a cheese board w/ assorted crackers
vegetable platter
spinach dip in a pumpernickel
sausage rolls
salsa and/or guacamole w/ tortilla chips

Delicious suggestions so far!

If you don't want to cook, I'd do:

Bowls of nuts
Bowls of olives
Veggie tray
Cheese board
Array of chocolates

you cook them then put a row of them on skewers. You can also do different dipping sauces, like pesto as well.

if there are tortilla chips, guac and salsa, i will be there with bells on :D

yes.. all of the above and easy to serve to a crowd.. leave out and easy to eat

How many per skewer?  Or long or short skewer?  And do you reheat or serve cold?  I like the idea but need more detail and instruction...

Ok so here is what I think I've decided on since every thing is read said to keep it simple because the host has to give a lot of house tours:
Make your own sandwiches.. I'm going to make chicken salad,tuna salad, two hot things in crockpot, Italian meatballs and roast beef at jus, maybe ham if they give them out at work this year and order an additional veggie/vegan wrap platter for vge cafe.
So e nice rolls and bread and condiments
Mac and cheese if I can convince my daughter to make it
Maybe some roasted veggies that won't be bad if they are at room temp
My friend is making a big winter type salad
Potato chips
This stuff will be in the kitchen

Spread throughout the house I will have a few veggies plates ( too much veggies if I do roasted?)
Cheese and crackers, grapes
Mixed nuts
Chips, guac and salsa

I'm not going to bother with a fruit salad.. The fruit is not great this time of year.. Just some grapes
And for dessert my haul of cookies from emirs party

If people ask what they can brig I will say nothing but if they insist i will say dessert and booze

Maybe a signature drink/punch but prob beer and wine only

Enough? Too much?

Why do people always claim this?  There are great apples, pineapples, oranges, clementines, grapes, starfruit, etc., in the stores all winter long.

That is a LOT of food.

:ok:  But if you can use it up later, then better too much than too little.  It all sounds great to me.  If you lived a little closer, I would beg an invite.

I agree that good fruit can be had. I almost always put out grapes.

Yes I did have a beautiful fruit salad for my brunch but I just don't want to cut it all up and some how melons etc in the winter don't seem right at night. Additionally I want to keep it as much finger foods as I can. I will probably go with some grapes which is what I said but stick to grapes only.

There will most likely be some grapes in the chicken salad as well

that is PLENTY of food, and substantial so if people are drinking there's something to slow the booze to blood progress  :)

I would lean toward roasted veggie salad, so that it's meant to be at room temp, rather than roasted veg where it isn't clear whether they're supposed to be hot or not.  The difference is subtle, it's almost entirely about creating a salad signal.  Roast veg as usual, let cool for a bit, toss with balasmic vinegar, a bit of olive oil and some crumbled goat cheeses (you want the cheese to get melty but retain some clumps); garnish with fresh parsley.  Now it looks like a salad and no one is worried about temperature.  (Or toss with some cooked but cooled grains instead of cheese... barley or quinoa will aslo say "hey, salad").

That's a ton of food and a lot of prep/clean up. But if it makes you anxious to think of not having substantial enough food, go for it. But, consider doing just cold cuts and skipping the sandwich salads.

Hmm it didn't seem like that much work to me.. Maybe I'm inexperienced but must of it do ahead stuff. I'm not making the meatballs ornate roast beef.. The only think I would be making would be the salads and I would probably get rotisserie chicken and use that

I just got a big spiral ham at work.. I'm going to serve that and the roast beef and meatballs and maybe do a chicken salad  and skip the tuna salad.. that should be enought of a variety in case anyone is particular.. oh.. and I will still get the vegan wrap tray.

if i come will it be vegan and gluten free? :D Things are leaning towards being able to come, which is good, but sad that we may miss family as their schedules are not aligning with ours.

I've got to go to vge and plan that platter but I can't promise no huge vats of ham, roast beef and meatballs!  I'm going to skip the chicken salad per the advice above.. Just cause I love it doesn't mean I should serve it

I'd cut the mac n cheese and the roasted vegetables.

That leaves you with a variety of sandwich options,
your friend's winter salad,
Cheese and crackers, grapes
Mixed nuts
Chips, guac and salsa.

Plenty of food, lots of variety.

yeah i think you have WAYYYY too much food. I had about 15 adults Sunday and had the hummus sampler, and the rice salad and the quinoa salad and had tons of leftovers.

4:30 is snacks, you're right. Which is even more reason to cut. The secret to stress-free hosting is not to spread yourself too thin and it's easy to do that with too many different dishes. Do a couple of things, executed really well. It doesn't sound like a lot of work (and none of those things is, individually) but what you've got laid out is a lot of work on the front and back end and you'll end up with lots of leftovers to deal with.

Frankly, you could do a nice cheese board with crackers, meats, olives, nuts, fruit (apples, grapes, and maybe some fig jam) and your guac/chips/salsa and if you really wanted to get crazy, do some mini quiches (the frozen ones from costco or trader joes are really excellent). Just that would be plenty for a snacks & a drink reception kind of thing. I promise!

But if you really want to do the whole sandwich thing just going with cheese, meat, a tray of veggies (lettuce, tomato, onion, maybe pickles, maybe some grilled veggies- but totally not necessary) & condiments. Skip all the hot stuff in crock pots. Skip the chicken and tuna salads. Skip the mac & cheese. Keep the salad, since your friend is making it. Keep the chips because they are easy. IMO (and as a vegetarian) you have plenty of vegetarian options in that bunch. I don't think it's necessary to do a whole seperate veg spread.

A make-your-own sandwhich platter is sometimes cheaper (or within spitting distance) of buying everything and assembling yourself... just something to think about!

Mine was 4:30 and the last people left after 8pm, so i looked at it as dinner, MoS looked at it as snacks. I am pretty sure everyone did not go home and eat dinner, LOL. For us 7pm is bedtime, LOL!

Mine is at 7 it's dinner.. My friend isn't making the salad now since she's making a hot cocktail.. I'd rather have too much food then not enough

Here's my final list (pasted from my email that I sent to my daughter and friend..)  Please review and let me know if I am missing anything.. I tried to cut.. but i have basically the sandwich stuff.. the mac and cheese, the vegan platter and then munchie stuff... I can already see I forgot to list my veggie platter onthe email so add that in... thanks!
here's my final stuff/list.. tell me if I am missing anything and what I should add/cut
 
Meatballs and marinara sauce
roast beef au jus
Ham ( i have free from work so might as well use)
special mustards for ham
rolls, bread etc
pickles and other condiments (do you think I need this?)
Platter from VGE ( vegan and I'll get gluten free wraps on them)
mac and cheese (becky in charge of this)
quinoa and sweet potato salad ( i like the recipe and not too many veggies since I will have veggie platter)
 
( do you think I need or should get potato chips too to go with the sandwiches?)
 
This stuff will be in kitchen..
Out in living room/dining room..
 
cheese platter with 3-4 chesses, crackers, maybe some dates ( i already have so might as well use)
nuts ( almonds)
add.. veggie platter and dip
tortilla chips, salsa and gauc..
M and M's..
cookies from my cookie swap for dessert
 
Cecy's cider/rum drink
Wine and beers.. tell me how much wine and what kind to buy?  Kevin is buying cheap beer and I wll try to pick up some craft beer at wegmans ( i can only get two at a time!)
People will being alcohol too i think and I may even mention that on fb invite..
 
plates, napkins, silverware.. ( wine glasses .. cecy and linda) that should be enough but I may pick up some at dollar store
cups for hot drink..

Yes.. probably about that.. it looks like a lot typed out, but it really is not all that much.. sandwich makings, veggie platter, gauc and salas and cheese..

and then cookies...

When I put it that way.. it's not as much.. the long list is just my shopping list...

What do you think I can cut? Chips and gauc?

I think it's good.  Sandwiches, veggies, chips & dip, cookies.

Def manageable I already have the ham and meatballs and sauce i just needto get roast beef, gravy, rolls stuff for the salad, veggies, dip and cheese.. And beer and wine I have all day thurs and and Friday to shop.. Spreading out some Thursday and some Friday since Friday is pay day!

LOL! I have friends who ALWAYS have a pretzel platter at any event they host!
