imagine you open a basket that has

boneless pork loin chops
fresh pineapple
baby romaine lettuce
assorted fresh herbs (rosemary, marjoram, cilantro, thyme)


the pantry is limited but reasonably well stocked

what do you make?

Well, I make a pretty decent schnitzel, I could see that with a pineapple and herb chutney kind of thing?

Some kind of side salad. Maybe caesar salad if I had some anchovies.

I was leaning toward tacos... do something with the pork, pineapple salsa... but I don't have any any masa harina or any tortillas and I don't want to have to go to the store.


my coworker was all "sweet and sour pork, duh"... but that does NOT appeal to me

I was thinking about sandwiches, too. The above one looks yummy.

Or, a panini or Cuban pork sandwich... and save the pineapple for a side or dessert.

I'm thinking something like a lettuce rollup, with an asian sweet (only from the pineapple) and spicy glaze.
The herbs could be garnish because none of them fit the scenario.

I like this!  I have a big packet of rice paper that also needs using.

so by the time I got home the pineapple had been eaten, so it turned out to be fennel-crusted pan-roasted chops with a baby romaine salad (honey-cider vinegar-marjoram-hot mustard vinaigrette)
