I posted about my refried beans in the IP Monday and RA posted the link to my recipe, you could tacos and fixins with them. (Guac, salsa, cheese, lettuce, taco shells)

I'll save that one for when the vegan boss is in town. He's on vacation--a yoga retreat in Costa Rica-- so the theme for tomorrow is unhealthy!!!

I panicked and made a chicken salad in lettuce cups which nobody will like because it has fennel and arugula in it. I really need a go-to for these things.

However. Since I needed cooked chicken, I put some boneless chicken tenderloin in a foil packet, in a steamer basket in the Instant Pot with 1.5 cups water and cooked on high for 4 minutes, and it came out nicely. So that's good to know.

It ended up going over pretty well. Too much olive oil in my dressing, but good overall.
