I want to try baking some bread on the grill this year. I feel like a hot charcoal grill should work enough like an oven that I can get a decent result.
What I'm trying to decide is what to cook it in/on. I've seen some recommendations for a pizza stone, I'm also thinking about using my cast iron dutch oven (without the lid). My biggest worry is the bread burning on the bottom before it's done.
Anyone tried this? Any ideas?

I would either the pizza stone, cast iron skillet or a cookie sheet would work. The trickier part is doing it in a charcoal grill where it's tougher to control the temperature than it is in a propane grill. To help with the potential bottom burning, maybe try doing it with indirect heat, piling up the charcoals to one side of the grill while putting the bread on the other side?

Yeah, indirect heat is good advice. I'm thinking maybe adding bricks or stones to help regulate the heat a little more. And of course being patient about not opening the lid all the time!

what type of bread?
anyway - i use a cookie sheet for this type of thing. bank the coals around the sides of the grill after they're ready.

Yep, indirect heat and a closed oven.

Probably something simple like Bittman's No Knead recipe.

This is how we grill pizza on a stone.
I think we are doing it tomorrow. Yum!

What a coincidence! I was just reading this last night. I haven't tried it myself but the tips sound helpful.
