DD wants an ice cream cake for her bday. I am pretty sure anywhere local will not have ingredients up to my liking/approval. And not sure about food allergies in her class (gluten, etc. I know there are no nut allergies). SOOoooooo I was thinking about making one. Anyone ever do it? I was thinking get a big rectangle cake pan, layer the cake, then spoon softened ice cream on top, freeze, remove and frost and refreeze? Another layer of cake on top? How long before serving is it removed from the freezer? I have never had much experience with ice cream cakes. 20 kids plus parents, what size?

i usually do it with rounds - bake and level. slice in half horizontally. spread with softened ice cream and sandwich the ice cream with the two half layers. then put the whole thing in the freezer. once it's set, i frost.
make sure you use a substantial cake recipe - sponge isn't going to cut it!
if you're making cake for 20 kids plus their guardians, i would make a 9x13, slice in half horiz, and sandwich the ice cream.

you don't have to sandwich. you could spread 1 whole cake with softened ice cream, smooth/shape, freeze, and then frost. if that's what you choose to do, make a form with alu foil.

Make semi freddo from scratch. It's very easy to make. I made some with pineapple last week. It got great reviews. It's also softer than ice cream so slicing it with the cake out of the freezer isn't going to be hard to do.

I made an ice cream cake for Passover. There is a frozen custard place nearby (Witt's) that has gluten free custard that is delicious with very few ingredients. I bought 3 really big tubs of ice cream from them for this project.
I did this:
10" springform cake pan with tinfoil underneath.
I had all 3 large containers of ice cream out but if I had time, I'd do it one at a time and set the cake in between. So take out one ice cream and let it warm until you can handle it.
I crushed (Passover kosher) cookies in the food processor and made a base out of 1/4 of them. (You could do this with GF cookies or bake GF brownies for the bottom or another substantial cake recipe.)
Then I took the first flavor (chocolate) of custard, spooned it on top of the cookie base, then smoothed it (it was warm enough to smooth but not ooze).
Then I put another layer of 1/4 of the cookies. (you could omit the cookies or put something else in between, like chocolate chips, or nothing). If you had lots of time, I'd put the cake in the freezer to firm up more at this time, while also taking out the second flavor to soften a bit.
Pull cake back out of freezer, put second flavor of ice cream on top (black cherry chip for us), smooth, layer of whatever, then back in the freezer and take out third flavor.
Repeat with third flavor.
We then put ours in the freezer overnight. Before serving, it only sat out long enough to pull off the springform ring and pipe whipped cream on it.
I'm not sure you could transport this to school without melting unless you let it really, really freeze.

If you freeze them overnight they will stay plenty cool for transport if well wrapped. I make mine like diablita does, you probably don't use whipped cream from a can but you can pipe it over the top then freeze and it will look real perty. I like to throw in some cookies/ candies on top and put caramel or fudge topping between the layers.

I do it every year for Gus. I bake two cake in two rectangular pans, slice ice cream from a carton (or sometimes ice cream sandwiches) and layer over one cake then put the other cake on top and frost. Gus always wants a red velvet and ice cream cake for his birthday.

My grandma used to make hot fudge cake and she would slice the ice cream to put between the layers with one of the big knives her dad make her in his blacksmith shop. I'd forgotten why I knew to do that until just now. Thanks for the memory.

I was talking about this with another parent at the bus stop last week. We both grew up with these commercials (NJ and NY) and his voice is unmistakable!

I made 25 meringue mushrooms so there was enough for everyone to get one with each slice. The cake was 4 layers tall, so i took the top two off, refrosted the bottom two and sliced and served. While i was performing surgery on the cake, DH handed out fruit "wands" to the kids which was fruit cut with mini cookie cutters and put on skewers. :D

Good job, meri! That's a very nice looking cake! Much more professional looking than many cakes I've seen online.

I was hoping the "log" would be higher, but just happy it all stayed together (it was very hit out and a few years ago I did a fancy Thomas cake with a train coming out of a tunnel on a hill and the hill layers slid a bit. I did put dowls in the cake since it was four high.).

That looks great! Gus's birthday is Thursday and I'll make his annual red velvet ice cream cake but it won't be nearly that pretty.
