This morning I wanted pancakes. I was taking DD to a pancake breakfast at the JCC and wanted something I could eat beforehand.
These were freaking delicious:

(almond meal would have been just as good; not sure I love coconut flour but I could see that working too) I used my stick blender to blend it well (no flour = no overworking the batter)
So this evening I was sick of my 2 staple snacks and wanted something sweet so I mixed this:
2 bananas
3 tbls peanut butter
4 eggs (could have used 3; they're a little spongy but still good; will make good breakfast muffin)
1 tbls baking powder
1 tbls vegetable oil (not necessary but on this diet I need extra fat and it is nice for the texture)
2/3 cup cashew flour/meal (cashew flour/meal is just finely ground cashews. you can pulse cashews enough that they turn into little pieces but not so much that they turn into butter. you could also use almond meal or possibly coconut flour?)
cinnamon
nutmeg
pinch of salt
I also added a tbls of date syrup (it's just dates and water). You could add sugar if you're not doing the whole life challenge but it's good with no sweetener, too.
I filled a 12-cup muffin tin (they don't rise much) and baked until they toothpick came out clean (20 minutes for mine)
