if the omnivores are being served warm food I would not be happy with a cold salad assuming this is an event that the attendees are paying for.
seeing as i end up eating nothing at most functions, i would be very happy with a delicious hearty salad of quinoa, beans and other goodies.

I made this recipe a while back and it was excellent. I made it into a whole lasagna but the rolls might work better for individual portions in your situation.

There's more to the story. She's actually currently hospitalized and won't be at our dinner. I didn't want to put any extra stress on her or the people taking up the "slack" for her abscense. I'm sure a vegetable broth substitute would have worked, but the chix broth was already purchased and I don't know that the vegetarians would have wanted just wild rice and veggie medley for their entree anyway.

How about a soup in the crock pot? Butternut squash. Broccoli cheese. Hearty vegetable. All those can be made ahead and warmed in the crock pot.
