reheating mashed potatoes
« on: December 15, 2013, 06:13:01 PM »
I want to take mashed potatoes to a work potluck but I need to make them the night before.  Do you need to do anything special when reheating?  They don't usually taste the same to me when reheated, and the texture changes.

I have never felt any difference with reheated potatoes,...

Should be the same, maybe add a little extra butter for moistness. We reheat (stovetop) all the time, taste fine to me.

Use extra butter or milk.

will you be reheating stovetop, oven, or microwave?

if you have a choice, reheat in the oven, and prep so that you have a layer of breadcrumbs tossed with olive oil & black pepper and/ or a shredded cheese topping, then you have mashed potato casserole and you don't have to worry if the edges get crispy because that's how it should be

(but also yes to the extra milk and/or butter)

I'll be reheating in the oven.  I'm afraid of the potatoes turning gluey-like and sticky.  I'll just take extra butter and milk.  I am making a garlic mashed potato that has romano cheese mixed in.

can you put in a crock pot and turn it on low when you arrive and stir it every so often to reheat?

Could you just pre cook the potatoes but then mash them and in add milk and butter when you reheat them?  That way they would not be so gluey.

Pioneer Woman has a recipe for mashed potatoes that you make ahead of time and then heat in the oven.  It has cream cheese in it to add creaminess.  I have never used it, I usually just add extra milk after the potatoes are reheated.

You could also try a wide/flat dish (like 9x13 baking dish) to reheat them in. You want to stir as little as possible. That is what causes the "glueyness". So, stir as little as possible when making them and then stir as little as possible when reheating. Avoid using a hand mixer or anything like that to do your mixing for you.

My problem is solved!  I work in an extended stay hotel, which means we have full kitchens in the rooms.  I'm just going to make them in a room here before the potluck.

I just decided to make them at home and reheat tomorrow.  I hope they'll be fine.  :fingers:  I tried a new recipe and they are  :drooling-5:.  I can't stop eating them and my kids are mad that I won't let them have more, so hopefully they make it to work tomorrow.

I made these but roasted the garlic instead of fresh:
