There was a CHer who once emailed out a giant text file of crockpot recipes.  I don't remember what her CH name was, but I still have it sitting in my email inbox if anyone wants it.

Chicken taco soup

1 can diced tomatoes
1 can rotel tomateos (diced + green chiles)
1 light beer (or 12 oz chicken broth)
1 can black beans
1 can chili beans (pintos, I think with chili seasoning)
1 pkg taco seasoning
chicken breast (8-12 oz)
Chopped onions if you like them
frozen corn, about a cup

Put it all in the crockpot.  Cook all day.  COme home, pull out the chicken, shred it, and put it back in.  Stir, and eat.  I throw the chicken in frozen in the morning.  It's fine all day on low.  It's healthy (about 200 calories for a good sized bowl, I get about 7 servings out it) and is great reheated (it freezes well, too). 

SUPER EASY.  No prep, really, other than throwing it all in the crockpot.  It's not fancy, but it's good.  I don't put onions in it because DH is a pussy and doesn't like them.  Grin

excellent thread!  I am using my crock pot more and more lately, as I just don't have time in the evenings to cook dinner.  Anyway, tonight's meal is pot roast.  I hope it'll be good. 

four large red potatoes
lots of carrots
a red onion, sliced thick
four garlic cloves
a 2lb chuck roast
a bottle of Christmas beer (still in the fridge since last Christmas   Grin)
kosher salt
black pepper
oregano
2 bay leaves

set on low and we'll eat it tonight.  It'll probably be in the pot for about 10 - 12 hours.  I'm hoping it's good.

I've made the chicken and dumplings, the flank steak with apples and feta and a bunch more I can't think of right now.

I also get a pot roast and use one of those McCormick packets for the slow cooker (came out great)

Or I'll make chicken to put on top of a salad. It's awesome.

Balsamic-Braised Root Vegetables

3 large carrots
4 shallots
2 turnips
1 parsnip

(or whatever root vegetables you like)

2 T olive oil
2 T balsamic vinegar
2 T water
1 T brown sugar
salt and pepper

Cut the veggies into chunks.  Dump all in crockpot. Stir.  Cook on low for 8 hours.
