Chicken taco soup
1 can diced tomatoes
1 can rotel tomateos (diced + green chiles)
1 light beer (or 12 oz chicken broth)
1 can black beans
1 can chili beans (pintos, I think with chili seasoning)
1 pkg taco seasoning
chicken breast (8-12 oz)
Chopped onions if you like them
frozen corn, about a cup
Put it all in the crockpot. Cook all day. COme home, pull out the chicken, shred it, and put it back in. Stir, and eat. I throw the chicken in frozen in the morning. It's fine all day on low. It's healthy (about 200 calories for a good sized bowl, I get about 7 servings out it) and is great reheated (it freezes well, too).
SUPER EASY. No prep, really, other than throwing it all in the crockpot. It's not fancy, but it's good. I don't put onions in it because DH is a pussy and doesn't like them.
