I harvested 1 bazillion carrots this past weekend.
Tonight I made carrot soup. Oh. My. God, so good.
Carrots in instant pot with ginger, 2 in chicken stock, apple, salt and pepper, apple cider vinegar. 20 min.
Puree and blend with milk, cream or stock for soup. Or freeze puree and just blend when you want soup.
My taste buds are in love.
