Turns out, I like it! I don't like beef, at all, and haven't eaten it in almost 25 years so I gave precisely zero thought to bison.Tried it on a whim this weekend and Even better, it's leaner, higher in iron and more sustainable than beef.
Good, but relatively expensive.
It is, but I am unlikely to eat it that often. I made bison burgers on the grill.
