Egg salad sandwiches. 

Broccoli-Peanut Salad:

6 C. broccoli, chopped
1/2 C. red onion, chopped
1/2 C. raisins
4 oz peanuts, chopped.

Combine with a dressing made of
1/2 C. lowfat mayo
1/2 C. lowfat sour cream
1 T honey
pinch of ground ginger
pinch of ground white pepper.


Add yours.

I love couscous in the summer, then some marinated rib eye in the grill

Or

Caprese salad with grilled chicken en brochettes.

Bagged kale salad from costco topped with roti chicken from the same.

Crostini topped with said caprese salad.

Tartines topped with salami and cappacola with whatever cheese I have in the fridge. Broiled then topped with rocket and drizzled with huile d'olive.

I have started to use the crock pot this summer because of the heat.  I also make easy things, like grilled cheese, lunch meat sandwiches (due to being pregnant I do have to grill the meat.)  We also grill out a lot more

Cowboy caviar is my summer go-to, I know I've posted this recipe before but it is so delicious.  Beans, tomatoes, avocado, corn, red pepper, red onions, italian dressing, squeeze of lime, salt/pepper/garlic powder to taste.  Eat with tortilla chips.  You could add jalapeno or cilantro if you liked those things, but I don't so I leave them out.

so many dinner-salads: nicoise, fatoosh, greek (village) salad, spinach salad w/ hard boiled eggs

poached salmon is a summer staple here

chickpeas tossed with dressing & a few chopped veg, topped with grilled squid & chorizo

souvlaki

I made some tabouleh over romaine salad topped with grilled chicken marinated in lemon and garlic. Had it with home made hummus and warmed up flat bread. We had it with some torrontés wine. The best summer meal ever.

My market stopped carrying the rice wrappers, so have to find them somewhere else, but they are always good. You can pretty much stuff it with anything. I like to stuff them with cucumbers, carrots, red bell peppers, spinach, etc and then experiment with dipping sauces.

Something like stirfry where you only cook very briefly

fresh spring rolls are a great idea

wraps/sandwiches
