Shredded cabbage

Any suggestions for using up shredded cabbage? We buy a HUGE bag of this at the Costco business center and pretty much always have a vinegar slaw marinating in the fridge, but even with the astounding amount of cabbage we take down at most meals, we still have extra that we’re trying to use before it goes bad.

It’s so cheap I don’t feel too bad about tossing it, but I’m trying to cut down on food waste and would love to find a few more regular recipes to incorporate it during the week. Even better if it’s something that freezes well!

okonomiyaki!

we use the batter instructions from this recipe:https://www.bbcgoodfood.com/recipes/japanese-okonomiyaki

and fill it will shredded cabbage and whatever else we have on hand, may or may not put any seafood or bacon in it, but typically shred any raw veg we use but will also julienne leftover roast veg, etc.

for sauce, we just use sriracha and mayo

I cook it down quite a bit because kenyan doesn't love cabbage, and the more it's cooked down the more veggies he (unknowingly, lol) eats. For even more veggies, you can sub half of the ground beef with riced cauliflower and you can't even tell the difference. You can play with the amount of brown sugar in the sauce, I don't think it needs as much as the recipe calls for.

Oh that looks good! I had come across that one, but the amount of sugar gave me pause. I’ll try it with less.

Not shredded but I have half a head of red cabbage left (nearly 2 lbs) to do something with.  Boyfriend's InstaPot is an option since it's the weekend.
