On this five day trip, everyone gets assigned one breakfast and one dinner. You cook for the crowd for your meals and then sit back and enjoy for the rest of the trip. My dinner will be Thai pulled pork sandwiches with slaw and fried rice. (I don't know if fried rice is overly "Thai" but the kids like it so much that I figure what the hell.)
Here's my game plan:
I drew the first night (tomorrow night), so I'm going to slow cook the pork at home and bring to camp -- if I had a later night I'd do that part in my dutch oven at camp, but I won't have time the first night.
Tonight:
- Shred cabbage and make dressing for slaw
- Prepare rice in rice cooker, refrigerate
- Prep the first part of the pork seasoning/Thai sauce
Tomorrow morning (at home):
- Slow cook pork, shred
Tomorrow afternoon (at camp)
- Toss together slaw
- Finish Thai sauce over camp stove
- Reheat pork over camp stove with Thai sauce (leaving some of the pulled pork plain for the kids)
- Stir fry rice on camp stove
- slice/prep sandwich condiments
- toast rolls on stove
I love cooking the first night -- then I can sit back and relax the rest of the time!
