My puerto rican coworker makes mashed plantains for holiday celebrations (lots iof garlic is involved). He also makes plantain stuffing.

I'm not into platanos maduros, I prefer the savory preparations before they get ripe, like tostones.  I'd only eat that in a restaurant since I don't love them enough to make them at home.
But I love, love, love tortilla de platano which is an omelette (think of tortilla española) with sweet plantains in it, served with black beans with garlic on the side.  I love that sweet/savory combo and the egg and beans at least add a protein component.

I like them baked with cheese.  Or mashed.  Or even dry fried in a pan.

I love platanos maduros, but I don't fry them.  I just bake them, sometimes with cheese but usually not.  I do usually serve them with eggs, black beans, and corn tortillas.  The best breakfast I've ever eaten was in Honduras.  Scrambled eggs, black beans, freshly made corn tortillas, and sweet plantains.  It was like six years ago and I still remember it fondly.

Love, love, love plantains.  Tostones is my favorite.  I have also made enchiladas filled with plantains and black beans.  Yum!

sometimes I boil them (green ones) and mash them with boiled sweet potato, sauteed onion & garlic and spices and use that as a burrito filling

I can't have plantains unfried. It's just better that way. I've sauteed them in sugar, butter and rum to make a much firmer Bananas Foster thing, then stuff them into small puff pastry pockets and baked them like a banana finger pie or empanadas.

OMG I love okra and can eat it any way it's cooked as long as it's not slimey.  I love pan-fried Indian okra (bindi masala)

As for the tostones, we're staying in a friend's condo this week that's 1/2 mile away from Patacon: Colombian place that makes their famous dish -- tostones that are pounded so flat they can be used in place of bread for a sandwich.

I love okra too!  We had okra "fries" at a restaurant on Saturday - yum!

There is a little hole in the wall Coloumbian place here that uses tostones for sandwiches.  Fabulous.

I grew up on this stuff.

reading that recipe made me go  :!:

plantain would make a great topping for a variation of shepherd's pie, which as a bonus would give me an excuse to put boiled eggs and green olives in a shepherd's pie...
