All the meat looked like crap at the grocery store and the butcher was stocking the case and asked me if he could help. I told him I wanted beef, but wasn't thrilled with the selection and he suggested Flat Iron Steak. For some reason, I thought it was one of those cuts that you had to marinade or be faced with a tough piece of meat. He told me that was not the case so I bought it to give it a go. Holy crap. It was amazing. All I did was put some olive oil, kosher salt and pepper on both sides and gave 5 minutes on each side on the grill. We didn't even need a knife to cut it. The guy said it was second only to the filet in terms of tenderness. He was spot on.
