Super Bowl breakfast recipes?
« on: January 28, 2014, 10:48:46 AM »
Any ideas? The Super Bowl will be on here at some dumb time, like 3am. Dh and his friends are going to get up that early to watch, but they don't want food food. They want breakfast stuff. Andy ideas on something I can make the night before that he can take, or that needs easy reheating?

Breakfast burritos?  You can assemble them in advance.  Either wrap them individually in plastic wrap for microwave reheating, or put them all in a 9x13 dish, covered with foil, for reheating in the oven.  When I make them I generally sauté up some onions, mushrooms, peppers and garlic with some type of breakfast meat (bacon or sausage---I know you don't use pork but you could use diced turkey bacon in these).  Add eggs, salsa and cheese and wrap up in tortillas.  They are also good with hash browns or black beans in them, which I usually skip for just the two of us but if you're making them for a crowd it's an easy way to bulk up the filling.

A breakfast casserole of some sort?  Assemble it that night before and DH just has to pop it in the oven.  I have a recipe somewhere for one with prosciutto (could you use turkey?), fresh basil and tomatoes, crusty bread, eggs and a few different kinds of cheeses.  I have made it for tailgating brunch for noon football games.

Pancakes. those reheat easily. Same with waffles. I like the casserole idea.  I would think a sausage egg combo (turkey sausage) would work well.

In the same vein as Nadra... Can you get chorizo and tortillas?  Tacos are always easy... put out lots of different options for fillings... Pretty simple and easy... no forks and knives, etc...

I think I need to have a breakfast get together just to make all of this stuff!

So now, one of the guys has to go out of the country on business. May be just two of them. Dh has requested buffalo chicken biscuits. I don't even know where to start with that one!

Quiche. Transports without spilling. Reheats easily.  Can be eaten cold in a pinch.
