I have a bottle of white truffle oil that I never opened and have kept in a dark cabinet for...um...a couple years. What are the chances it's still good??

I'm sure it's fine. I'd just open it and see what happens. If it smells bad, or has weird floaties, I'd toss it. Otherwise, I'm sure it's fine.

I would use it unless it smelled rancid. Bad oil is not usually subtle.

I had one in my cabinet for quite a while but once I opened it ...I started using it on everything! It is quite good.

It should be fine and quite delicious. We have found that drizzling it on almost any roasted vegetable (also corn!) is amazing. Drizzle before serving, use regular olive oil for the pre-roast marinade (some of the truffle essence cooks away during roasting).
