Southern-Style Greens

I have a ton of kale in my garden and I am making pulled pork for dinner (and having friends over to help us eat).

Please talk to me about your favorite southern greens recipes.  Bacon or ham?  Boiling or no boiling?

My crock pot is busy with the pork, so I will have to cook my greens on the stove.

I sauté with bacon and onions, but I'm a Yankee.

I've never had kale, but I vote for bacon, garlic, and butter.

I thought "southern style" is nothing more than cooking it forever...  Maybe someone with a certain bias told me this.  :)

I sautee my kale in olive oil with a shitload of garlic and some chopped anchovies, so I'm probably no help.
