Flavored Rice

A couple of months ago I got one of these:



It isn't fancy and it has only 6 cups cooked volume, but it works for just the two of us.  I use it a lot!  I've been playing around with no-calorie flavorings for rice and have found some I really like.  I have added a bay leaf only, a bay leaf and whole allspice, and tonight I tried a bay leaf, whole allspice and cardamom pods.  The rice has a very light flavor and I'm tempted to call it scented rather than flavored.  I really like it.  I am planning on many more experiments, but was wondering if you have a favorite low- or no-cal way of adding flavor to your rice?

I love my rice cooker!! I generally make plain rice, but sometimes I cook it in stock instead of water. How about lemon rice, with a bit of lemon zest? Fair warning: I just made that up.  But it sounds good?

there are some nice rices out there, like weehani rice, etc.  I would suggest just looking for something else than the plain white or brown rice.  Trader Joe's also has some nice mixtures.  Or you can use broth instead of water.

Oh, lemon zest and chopped parsley would be awesome. I've made a version of Chipotle's lime cilantro rice and it's pretty good. I have used broth before, too. I haven't heard of weehani rice. I'll look for it, and other mixes the next time I go to Trader Joe's.

Wehani is somewhat local! It sounds Hawaiian. I can't believe I haven't seen or heard of it before. Also, I have never seen dried limes. Do you buy them or make them?

I buy them at a middle-eastern grocery... very common in persian food...

I mostly use them whole in stews.  For rice, I pierce them but I don't crush or grind.

Cool. I feel like I have some, I will have to dig around in the pantry. My SIL gave me a bunch of Persian cooking stuff that I haven't really used. I will report back!

I always cook rice in chicken stock. Sometimes I add McCormick's chicken seasoning if i'm making plain rice.

we often use adobo seasoning in our rice.  it's very salty, though, so adjust accordingly.

I just made some smoked basmati rice I found in a store yesterday.  It's delicious.
