We are trying to figure this out (with little luck). Do you have a good recipe?
-
yes, with some success. I use my brother's recipe (written on the back of a receipt I had in my pocket when I asked him).
Lemme find it and I'll post it.

I made it once a long time ago with little success. I want to try a GF version now that i am older, wiser, and have more culinary experience.

I have made these butternut squash gnocchi (http://iowagirleats.com/recipes/?recipe_id=6033647), except I had some pumpkin to use up so I used that instead of butternut squash. They were pretty easy, but not pretty at all.
I want to try these easy ricotta gnocchi (http://www.budgetbytes.com/2011/08/easy-ricotta-gnocchi/), they look pretty good.

Oooh, yeah.

3 starchy potatoes
1 egg
flour
Microwave the potatoes (you can also bake them but that takes a while).
Peel them, then mix them with the egg.
Add enough flour to make it workable. Not too much, or they're like lead, too little and you'll shoot yourself in irritation.
Then heavily flour your work surface, roll out the dough into a snake, cut off hunks, and score them with a fork.
Drop them in boiling water. They're done when they float.

I'm going to try this. The 10# bag of potatoes was on sale for less than the 5# bag, even though 5# of potatoes is more than we can usually go through before they start to sprout.

This. I tend to use leftover mashed potatoes. For what I am not planning on eating that evening, I place the gnocchi on baking sheets (not touching), freeze, then bag in small amount to save for later meals.
