I have a friend here who is the casserole queen. Well, not really casseroles, but she has a meal ready at the drop of a hat. Anytime someone is coming back from a trip, she brings food for a few days until the jet lag is bearable. If any of us are sick she has food ready.
She is going to Pakistan next month so I want to take a meal when they come back, but her husband eats dairy and gluten free. They're Indian so they like their types of dishes, but they eat pretty much anything. Before his diet change I would take baked ziti or lasagna.
Any suggestions?

All my meals are gluten fee and dairy free! Would they like a Mexican rice casserole? I have a good recipe. Or an enchilada recipe? Can you get spaghetti squash? I have a great spaghetti squash lasagna with tofu instead of cheese. I posted a sweet potato quinoa chili in Barry's thread.

I use either homemade cashew cheeze or non dairy cheeze. (Daiya brand usually). The second one would probably be fine without cheese if you cannot find a non dairy alternative.

How does cashew cheese caloric and fat count compare to regular cheese?

I am not sure. You could probably put it in a nutritional recipe calculator and compare

I've been wanting to try a good moussaka recipe.
This one requires some cheese, but I imagine you could eliminate it when you make it, MG.

It's basically an omelette with onion and potato that is great served hot or cold and is even better after it's been sitting around for a bit. This is my favorite no fuss recipe:

This family that I'm looking for recipes for is coming over on Monday for Eid breakfast. I'll make the Spanish tortilla and a big fruit platter and some grits for him in addition to waffles and stuff.
