The header for the first recipe mentions Kale, but I don't see it in the recipe, so I'm also planning to incorperate some kale in there.
What else? Enchiladas seems like the obvious choice... but I'm trying to keep this semi healthy. I do think it needs a third component though. Maybe some farro? Or really excellent bread (or tortillas)? I'm stumped.

That bean thing looks good. The kale is mentioned in the recipe...
2/3 cup kale or chard, washed, de-stemmed, and very finely chopped

What about veggie tacos? Do some roasted squash, sweet potatoes, onions, colorful peppers. Cut up in small dice with some garlic, maybe some cumin and chili powder. Roll it up in corn tortillas. Throw on some cheese and avocado. Or whatever you want.

yes, i second tricia's idea (i was thinking veggie enchiladas, but tacos might be better).
