Post by: Run Amok on September 16, 2013, 11:01:41 AM
Are you planning to try any new soup recipes this year?

I want to try this one:

DD's favorite food is soup, so I am always trying new recipes. i made a variation of this last week that she loved http://www.thefirstmess.com/2013/08/21/vegan-millet-corn-chowder-with-greens-recipe/ (http://www.thefirstmess.com/2013/08/21/vegan-millet-corn-chowder-with-greens-recipe/) I blended up some of the broth with raw cashews to make it creamier.

this is the original recipe i made that gave me the cashew idea, this one was really good too
http://www.cheekykitchen.com/2012/02/creamy-corn-chowder-totes-vegan.html (http://www.cheekykitchen.com/2012/02/creamy-corn-chowder-totes-vegan.html)

one of these will probably be next
http://www.thenakedkitchen.com/roasted-tomato-and-quinoa-soup/ (http://www.thenakedkitchen.com/roasted-tomato-and-quinoa-soup/)

http://www.thekitchn.com/recipe-tomato-cashew-soup-70929 (http://www.thekitchn.com/recipe-tomato-cashew-soup-70929)

Her school went nut free this year, so it is hard because i like to send her soup in a thermos for lunch, but can't if i use cashews, but cashews make it more nutritious. Oh well. Better than a kid dying indeed!

Yes!  The beet soup looks good, but DH is absolutely not a beet fan.

I find that roasted beets do not have a different flavor from the canned beets, esp. when used in recipes.

I made a plain pea soup in the slow cooker last night; it's tonight's dinner.

Am planning on finding some new soup recipes, though.

That looks good.  I'm going to try it, but am missing a few ingredients.  Off to the grocery tomorrow.

It does look really good.  It's going to be rainy tomorrow, I might have to make it!

It was definitely better the second and third day. For sure. This one needs the time for the flavors to meld.

I bought the ingredients for the cauliflower soup today.  Made the trip to the grocery store by bike, no less.  Help, I'm turning into some kind of quiche-eating, low carbon emitting, hippy!  :rotfl:

I think you're safe ... hippies and quiches don't quite go hand in hand.

This was a favorite from last year:

DD got some lentil soup at the natural food store with DH yesterday for lunch and i ate all the leftovers, it was really good, kinda thai in flavor. Red lentils, coconut milk, spices.

I made a couple good soups lately. I made a garden vegetable soup with all the veggies from my garden (tomato, green beans, zucchini, bell pepper, and leeks) and the other night I made potato leek soup because it was cold and rainy out.

we've been having trouble regulating our refrigerator (I fear it is dying on us) and as a result ended up with 3 lbs of frozen tomatoes...  >:(

so we oven-roasted the tomatoes, then pan-roasted (on a dry cast iron skillet) a couple small onions, several garlic cloves, a fresh hot pepper... once the pan roasted veg were cool enough to handle, they were peeled and coarsely chopped then sauteed in a bit of olive oil and butter... a bit of tequila splashed in and evaporated... tomatoes skinned and chopped and added, then about 2-1/2 cups of chicken broth; brought to a boil and simmered for a couple hours... pureed, heated through and served with some fried tortilla strips

I made Caldo de Res. Beef soup with lots of chunky vegetables. Omitted some vegetables that aren't compliant with my way of eating right now.

How did it come out?

I was quite surprised.  I sauteed some onions, garlic, carrots, threw in boiled potatoes, and then added chicken broth and a little milk, pepper, etc.  Blended the whole thing, added baby spinach.  I served it with parmesan cheese.  Very easy and tasty.

Good way to use the boiled potatoes that did not get eaten at a race.

I went thru a potato soup phase this summer - I added leeks, parsley and turkey bacon.
