I'm going to try to make this tonight:

DH is wary of gazpacho, but he hasn't had it in probably over 25 years. Beets are roasting as I type this!

It was actually really good! The only thing that I did differently from the recipe was strain the soup at the end. Some other website pointed out that this makes is more like a broth and less like salsa. Even DH like it and he had been very skeptical.

Love gazpacho!
That recipe looks like an interesting to use more of our beets.
Anything which incorporates what we have as a bumper crop (cukes, tomatoes, onions, etc) is worth a try.
Today I made a gazpacho drink in the Vitamix. :) didn't bother to serve as a soup...just pulverized, chilled it, and drank like a v-8 juice. Yum!
