We have to go to Eid prayer at 5am!!!!!! So I thi I I'll taste it in the morning and report back. I did add some chopped walnuts and a tiny bit of coconut. The coconut was sweetened so I didn't want to add too much and make the bread too sweet. If it's good I think I'll make a few loafs to freeze.

I just bought a bag of old bananas, I'll be making this tonight - I don't have any bourbon, I hope rum is a good substitute.

It was great. I used 3/4c of the sugar like the recipe suggested and it was fine. Next time I think I'll toast the coconut and use unsweetened so I can put more of it in.

k, in the oven, with a few alterations:
No bourbon, so I used spiced rum
I added about an inch or so of fresh grated ginger
I added toasted walnuts and craisins
Hope it turns out good - I doubled the recipe and 2 pans of nasty would be a bad thing.

full of banana-y goodness, I was out of ground cloves, and didn't feel like grinding whole ones so that was missing too.

Oh shoot. I forgot to say I didn't add those. I didn't want to buy a whole bag of them to use just one pinch. My friend that I would normally borrow from is in Dubai. I'll try it with it next time. Now that I know it's good I'm going to make a few loaves and freeze them for when I need to have something to give folks.

I didn't care for the bourbon, personally. I tried adding it to my favorite banana bread recipe and it didn't do much for me.
