Title: Well that was a fail

I was trying to make potato wrapped eggs, like scotch eggs but with potato instead of meat. I couldn't get the shredded potato to stick to the hard boiled egg in order to bake it. Any ideas?

Shredded raw potato?  On boiled eggs?  :nono:  I think you're screwed.  You could try mixing some raw egg into the potato to make it more sticky.  But I would just wash that mess off the eggs and make egg salad or deviled eggs.

 I precooked the potato. It worked a bit better when mashed. Still needs some refining.

You need a binder. It wont bind and hold shape without this.

I would use something like this as your covering.

I think it would work with hash browns too (and I like the onion idea), but you need the egg/egg whites.

yeah, i was going to say binder-- flour, egg, etc in the potato mixture to hold it together.

ah ha. 

have you got it figured out yet?  I think you should use a rice flour or chickpea flour as a binder.

I didn't play around with it much more but just the pure mashing seemed to work a lot better.
