I buy this AMAZING salsa at the co-op http://www.mitchellsfresh.com/ (http://www.mitchellsfresh.com/) which is quite expensive as far as salsas go. I'm of the opinion I should be able to make it, but I can't find a recipe that is similar, and my tastebuds can't decipher out what I need to change.
Any suggestions for me?

I have a good sweet corn salsa that's pretty tasty! Here's the recipe:
Sweet Corn Salsa
2 cups frozen or drained canned corn
2 ripe medium tomatoes, diced (2 cups)
1/2 cup chopped fresh cilantro
1/4 medium red onion, chopped (1/2 cup)
2 medium jalapeno peppers, seeded and chopped
1/2 teaspoon sugar
1 teaspoon ground cumin
2 tablespoons distilled white vinegar
Salt and freshly ground black pepper to taste
Mix it all together!

I would think something with limes?
I make a pineapple mango salsa with limes, parsley, onions, jalapeno/serrano chiles, salt, pepper and maybe tomatoes.
I think that's it.

Hey, I found a lid that never made it to the recycling center!
Ingredients: Tomatoes, Onions, Cider Vinegar, Jalapeno Sauce (Distilled Vinegar, Jalapeno Pepper, Water, Salt, Corn Starch, Xanthan Gum, Ascorbic Acid), Cilantro, Salt, Pepper.
WTF! How can I possibly not be able to recreate that!

WTF! How can I possibly not be able to recreate that!
I'd be tempted to do a chimichuri type sauce, heavy on the peppers and toss it with tomatoes and onions.
2 c. packed cilantro
2-4 cloves garlic, or non at all since the ingredients don't include garlic
1/4 c. fresh oregano
1/4 c. cider vinegar (I usually use 1/2 vinegar, 1/2 lime juice but no lime in the ingredient list)
jalapeno peppers (I usually use green serranos, but not in your ingredient list)... maybe even use pickled jalapeno rather than fresh to better mimic the jalapeno taste; also I would err on the side of too many jalapenos for your purposes\
pinch of salt
blend together in a blender or food processor, use as much as you need for your salsa, freeze the rest until you need it again
