I got 2 pounds of these. Suggestions welcome for unusual recipes.

Nasu Dengaku ... you can google for variants if you like more or less sweet and different kinds of miso.

They suck up marinade so I also like to just cut them in half, marinate them, and then grill them.

this is so, so good. pair it with teetime's ginger carrot slaw recipe and some rice w/ seaweed. yum!

I use it in place of regular eggplant in recipes, more tender and less bitter, very little seeds, cooks faster. Fat free vegan blog has n eggplant quinoa burger tht is good as well as an eggplant creole casserole I like.

i typically slice japanese eggplant in halves or quarters and grill or stirfry.
i have also tossed them w/oil and baked them with tomatoes, onions, olives, raisins, some ground lamb, and some stock - very tasty.

teetime, I'm making that eggplant and the slaw for shabbat dinner on Friday.

What did you end up doing with all your eggplants? :D I thought of you when I walked by the big bag at Costco this weekend.

Can't wait for eggplant growing season! Our crop was amazing last year.
One of my favorite ways to prepare it (along with our other garden veggies) is in a ratatouille. Mmmmmm....
Not sure if we are doing the Japanese variety this year.
