Good because scallion pancakes are the bestest!

We do a dumpling party every year and the three mushroom dumpling is my favorite.  Not sure if that's traditional dim sum but good enough you should make them anyway.  We use premade dumpling wrappers and the filling has lots of button, shitake (dried and then reconstituted), and oyster mushrooms, chinese chives (thick almost like a scallion), garlic, carrot, and some cabbage.  The filling is cooked the night before with some seasonings (including sesame oil, salt, and I think some corn starch).  The direction of dumpling fillings is in CA this week but let me know if you are interested and I'll try and see if he can email the recipe.  Just be sure to save a day for chopping ... the filling is a labor of love :)

This lady has really phenomenal cook books featuring dumpligs- I've made several of her recipes and they've all beeen really fantastic. So, I'll just share her full online recipe collection and suggest you select a few to make. She includes a basic dumpling wrapper recipe (and rolling technique) and her bao recipe is also really excellent.

The pearl balls get great reviews from my friends.

I personally love the hue rice dumplings.

Dumplings freeze really well so I would suggest making them ahead of time, freezing them laid out on cookie sheets and then storing them in airtight containers (That way they won't stick). You can steam them right out of the freezer. Or you can thaw them. :)

I worked for a dot.bomb years ago where I had a Korean and a Chinese co-worker who loved to cook as much as I did.  We'd often get together at someone's house and cook up a storm.  We had a dumpling night and a bunch of co-workers joined us and we made dumplings together.  It was wonderful.  I discovered that I was really good at shaping the dumplings, maybe from years of making hamentaschen.

pork buns are made and ready to reheat
dough is prepped for green onion pancakes
pork & scallop (no local shrimp available) dumplings prepped & frozen (so they don't get soggy prior to steaming)
spicy salmon & salt cod cakes will be prepped this afternoon
still perusing dipping sauce recipes
also found some lychees, which is pretty miraculous around here

as a bonus, the freezer will be full of extra dim sum treats :)

still perusing dipping sauce recipes

This would really only go well with the dumplings (and may not really be Chinese) but at our dumpling party people end up eating the stuff with a spoon.  So very good (on the sweet side though so counter with a traditional ginger garlic dipping sauce for the pancakes, etc.)

Spicy Peanut Hoisin Dipping Sauce Recipe Ingredients:

1 cup shrimp and/or pork stock or water (we just use seafood stock from a box)
5 cloves garlic, minced
1 tablespoon thick soy sauce (no idea what thick means, we just use soy sauce)
1 teaspoon whole soybean sauce, crushed (we just use a tsp of salt or mild miso)
3 tablespoons of Hoisin sauce
4-6 tablespoons crunchy or creamy peanut butter (natural or organic)
2-3 teaspoons chili garlic sauce or diced chilies to taste 
1 ounce dry roasted peanuts, chopped


Directions:
1) In a small sauce pan, add stock and garlic. Bring to a boil and reduce heat to low.

2) Add thick soy sauce, crushed soybean sauce, Hoisin sauce, 4 tablespoons peanut butter and chili garlic sauce. Stir until peanut butter is dissolved and the sauce thickens. Add additional peanut butter until desired thickness is obtained. Adjust seasonings to taste. Garnish sauce with chopped peanuts.

Makes almost 2 cups of sauce
