Title: Liquid smoke

The slow cooker recipe book said it was a useful ingredient.  I got some, but I have no idea what it is.  Help!

well, it is liquid, when used in very sparing amounts, gives food a smokey flavor. I have used it in a lot of recipes, like jambalayas, seitan bbq ribs, etc.

And if I can weigh in as a carnivore, it gives most meats a nice smoky flavor whether you actually grill them over smoke or not.  Highly recommended.

I assumed it was a concoction of chemicals and/or MSG.  I was wrong.

I know I know. We had a BBQ place cater lunch at work for nurse's week. We had hbjrgers and hot dogs. I took one bite of the hamburger and couldn't eat anymore, it tasted like smoke with a little beef.

be very careful that you do not break your liquid smoke bottle... I repeat, do not break the liquid smoke bottle. I had one in my pantry. it somehow got knocked off the shelf and broke. OMG. Cleaning that up was disgusting and that smelled lasted forever. I had to throw out anything the liquid touched because it smelled so bad.  ICK.

I think it's a plastic bottle...  Might be a good reason for that. Thanks for the warning.

When I am not watching my calories in the winter I make a creamy cheddar potato soup with beef sausage and I add a touch of liquid smoke, and sometimes to my chili, I also have smoked sea salt that I use on occaison too.

Me too.  It's the secret ingredient in half the things I make that people really seem to like.

no it is like paprika, red powder, but smokey in flavor. It is amazing in dishes that call for it. A lot of the recipes i make have it as an ingredient.

i made some tempeh "bacon" yesterday and it called for liquid smoke. I have a bottle i bought ages ago, you use soooo little at a time that this one bottle will be a life time supply :D
