Now I have been a black bean brownie fan for a long time, but i was at a breakfast the other day and usually i can eat nothing but there was this brownie there that i could eat and thought this would be a good breakfast or snack option for DD.
YUM!
Black beans-15 oz
Eggs-3
Greek yogurt-1/2 cup+
Maple-1/2 cup
Vanilla-3 tsp
Cocoa powder-1/2 cup
Baking powder-1 tsp
1. Blend all the ingredients
2. Pour into a pan
3. Add Bitter chocolate-1/2 cup on the top (i used 2 tbs of mini enjoy life chips.)
4. Put it in the oven(350) for about 40 min plus

How is the texture? I initially hated black bean brownies because they tasted like black beans, but later found some recipes that tasted better. The problem was the texture, weird and spongy, and I couldn't get past it.

This was for my kid to have for breakfast or a healthy snack, no means a replacement to real delicious desserts or treats :D I made DH cookies a couple weeks ago and DD was going on and on about how awesome they were, yep because there was butter, sugar and flour in them :D

Never had any black bean brownies, and I don't think I have eaten more than 2 regular brownies in my entire life.
