Do any of y'all make your own? I have made it a long time ago and it was really good. DH brought some peanuts home the other day and he asked me to make some. I didn't realize he got salted/roasted peanuts. I did not add any salt at all and it was way too salty. I'm just glad I only did a little bit and not the whole big bag of peanuts. Never mind the salt, when I put it in the fridge, it was rock hard the next day. I know it won't be smooth right out of the fridge, but this was way too hard. Any tips for not rock hard PB? Did that have anything to do with the salt?

I added olive oil because that was all I had. Maybe I didn't add enough, or I shouldn't have sued olive oil. I only added a little.

Putting it in the fridge is part of the issue. Try letting it come to room temp.

Peanut butter has a ton of oil in it. Just look at any container of natural peanut butter at the store and the giant layer of oil on top.

1. You may need to stir it once in a while, but it should keep just fine at room temp as long as you are using it regularly.
PB has tons of oil because peanuts have tons of oil, not because oil needs to be added... I've never added any and I won't buy natural PB that has oil listed as an ingredient... (though I've never made it with salted peanuts so maybe that's part of the problem?)

Yeah, when I buy peanut butter the ingredients are always "Peanuts. Salt" and nothing else. So I assume that if I were to make homemade peanut butter, I wouldn't use anything else...
