Oh yeah... I/we've been making a lot of chicken strips wrapped with basil leaves and proscuitto.  It's really good, and really hard to stop eating.

grilled organic chicken, shrimp, grassfed beef or local fish
some kind of veggie..usually steamed broccoli, or cauliflower, brussels sprouts, asparagus, grilled zucchini
caprese salad

soups:
split pea (sometimes with ham bone. ..sometimes veggie)
chicken and barley
thai tofu soup

homemade veggie pinto beans
scrambled eggs, cheese and spinach
eggs over medium with left over pintos and salsa

Interesting. Like chicken breast cut in strips, and baked with the wraps?

Yep.  Cut in strips, lay out a sheet/piece of proscuitto.  Place the chicken strip on the proscuitto, top with some basil leaves, and roll up.  If you use enough proscuitto, you don't need to secure with a toothpick or anything.  Drizzle with olive oil, put some salt and pepper on top, and bake at 425 for 20 - 25 minutes, until the chicken is done.  Really, really good!  :drooling-5:

I like to make the chicken strips shorter so that the proscuitto covers the whole thing :d but I am a ham whore.
