I bought some to make a disastrous pad Thai - much more than I really needed. It's kind of a thick paste.
First, what's the shelf life and
b) how is it supposed to be stored?

refrigerated in a container. will last indefinitely.
it's great in dal - you can probably find some good recipes online.

I bought some, too, a while ago, and made a disastrous pad Thai, too...
I threw the container out.

Now I'm curious. What made your Pad Thai disastrous?

It wasn't really starchy like I'm used to. Also didn't have the right flavor. Under cooked the noodles - I know that sounds hard to do, but I did it.
I tried to make more than 2 servings at once. I'm told that really can't be done properly.
