I brought home some slices of pizza from Earth Fare (like WF) and put fake pepperoni and chopped hatch chilis on mine.  Crazy good!

Bonita, they're delicious roasted.   Addictive, really.

If I ate fish, I'd buy a ton of the Hatch chilis and use half raw/sliced in a ceviche (I make classic ceviche) and then the other half roasted and sprinkled on all my favorite foods as I've been doing.

They'd be fabulous in this recipe instead of the canned green chilis it calls for:
