A favorite, comfort-food dish! Like risotto, but with orzo pasta. Really delicious.....

I made this and it was amazing, but it took almost double the amount of liquid before the orzo wasn't chewy. What did i do wrong?

I definitely had to add more liquid.

I don't know, I've never had to add liquid....I'm using frozen corn, usually it's still mostly frozen so probably holding some water there. Maybe that? But now that I've been reminded, I'm adding this to this week's meal plan!

I finally made this last night. It was yummy. I can't wait to try it with fresh corn in the summer. I also had to add a lot of extra liquid. I do think some brands of orzo are bigger & thicker than others.
