Lemon Cheesecake filling

Any suggestions for what to do with leftover cheesecake filling?

I made lemon cheesecake (-‘s lemon curd) for DH’s birthday today, but swapped out several 4” pans for a 9” one. For some reason I ended up with far more batter (and crust mix) than I needed.

I’m not a cheesecake person, but the batter with a bit of lemon curd is amazing! So now I’m wondering if there’s anything else I could try doing with it. Maybe throw it in an ice cream maker? Any other thoughts?

you could swirl it into ice cream, or brownie batter and then bake it.
